How to prepare and cook Red speckled sugar beans

Red speckled sugar beans are a useful staple to keep in the cupboard. They are rich, satisfying and versatile, and can be used in warming stews, curries, soups, salads and comforting family meals.

Cooking dried beans takes a little time, but most of the process is completely hands-off. The secret lies in the preparation.

Here is our simple guide to preparing red speckled sugar beans at home:

1. Start by sorting and rinsing the beans

Pour the dried beans onto a clean surface and quickly sort through them. Remove any damaged beans or small pieces of debris before rinsing the beans thoroughly under cold running water.


2. Soak the beans before cooking

Soaking helps to soften the beans and reduce their cooking time. Choose either of the following methods:

Quick soak method

  1. Place the rinsed beans in a pot and cover generously with water.

  2. Bring the water to a boil and allow the beans to boil for 2 minutes.

  3. Remove the pot from the heat, cover it and leave the beans to soak for 60 minutes.

  4. Drain and rinse the beans before cooking.

Traditional soaking method

  1. Place the rinsed beans in a large bowl and cover them with cold water.

  2. Leave them to soak for 8 to 12 hours or overnight.

  3. Drain and rinse before cooking.

3. Cook the beans in fresh water

Once the beans have finished soaking, discard the soaking water, transfer the beans to a large pot and cover them with fresh water. Bring the pot to a boil before reducing the heat to a gentle simmer. Keep an eye on the water level while the beans cook and add more when needed. The beans should remain covered throughout the cooking process. The beans will usually take between 60 and 90 minutes to cook after soaking, but it can vary, so check them regularly until they reach your preferred tenderness.

4. Add salt at the right time

If the beans are taking longer than expected to soften, wait until they are nearly tender before adding salt. This can help avoid an unnecessarily long cooking time.

5. Add acidic ingredients later

Acidic ingredients can slow the softening process. Tomatoes, vinegar, lemon juice and wine should therefore be added only once the beans are almost tender. This is especially important when preparing tomato-based bean stews, curries or soups.

6. Add more flavour

For delicious savoury beans, add a few simple ingredients to the pot while they cook:

  • Onion

  • Garlic

  • Bay leaves

  • Black pepper

  • Fresh herbs

  • Stock

Once cooked, the beans can be added to soups, stews, curries, salads, chilli and vegetarian dishes.

7. Cook extra and freeze

Preparing a larger batch can save time on busy days. Once the beans are cooked, allow them to cool completely before dividing them into meal-sized portions.

Store the portions in airtight, freezer-safe containers or bags. They will then be ready to defrost whenever you need a convenient addition to a meal.
